Tomato Pie

One more easy to do recipe. This tomato pie recipe could remind you the pizza flavor but made with fresh tomatoes for me it tastes much better. For the success this recipe, you really have to remove the maximum juice from the tomatoes otherwise it will create a soaked, doughy bottom crust.

Ingredients:

1 9 inch pie crust
4 tomatoes
½ onion
10 leaves basil sliced
½ cup mayonnaise
2 cups grated mozzarella (or you also use cheddar)
1 teaspoon Tabasco

Method

Preheat the oven to 350 F.
Cut the tomatoes in half horizontally and squeeze it to remove the excess juice. Then roughly chop the tomatoes.
Lightly salt the chopped tomatoes and set them in a colander to drain.  Chop the onion.
During that time pre bake the pie crust for about 10 minutes until lightly browned.
Once the pie crust is pre-baked, sprinkle a layer of chopped onion over the bottom of the pie crust.
Then spread the drained chopped tomatoes and sprinkle the sliced basil over.
In a bowl, mix together the mayonnaise, Tabasco and the grated cheese. Add salt and pepper to taste.
Spread the cheese mixture over the tomatoes.
Place in the oven and bake for about 35 minutes until browned and bubbly.
